Do you mean bell peppers (which come in red, orange, yellow, green, and purple) or hotter peppers? Peppers are low in fat, and have the benefits of Vitamin C. They are also a source of B vitamins. The hotter peppers have capsaicin, which has benefits for arthritis patients. Supposedly (I'd need to research this) they have cardiovascular benefits as well. Me, I just like them. They are my favorite vegetable. Yes, they have fiber, and yes you can get gas from them. They're still mighty tasty!
